Mamas cookies 

 I do not feel guilty when eating these and I don’t have to limit intake for the kids because they’re really not that bad for you. This recipe makes a batch of 20 and they’ll easily disappear in 1 day! 

Ingredients

Plain Flour 300g

Butter (softened) 200g

Maple syrup 100ml (if you don’t have Maple Syrup you can use 200g of sugar but then I would advise not eating the whole 20 in a day!) 

1 large egg

1 tsp baking powder

1 tsp Vanilla Extract

A packet of chocolate chips or chunks (you could use smarties or a crushed chocolate bar)

Method

-Preheat oven 180c and line a baking tray with baking paper

-Beat the butter until creamed

-Add vanilla extract, egg and maple syrup and beat together.

-Stir in the sifted flour and baking powder. The mixture should come together to form a firm dough.

-Pop in the freezer for half an hour or so until the dough is cool and firm

-Roll pieces of dough into balls about 5cm in diameter and place them 5cm apart on the baking sheet pressing each one flat with the back of a fork.

-Bake for 10-15 minutes until cookies are golden brown. Cool on racks.
